An easy way to make fish, fast prep, 3 minute prep. 25 min cook time. Very tasty, very easy to prepare. Cant really go wrong here. Just watch and do. You will end up with a very healthy, family friendly version of fish. It is loaded with flavor so even the kids will like it. Drizzle with oil then sprinkle with salt, pepper, lemon pepper, dill, parsley, garlic powder and onion. Then bake it for 25-35 min. its done when it easily flakes apart with a fork.

3 Easy To Make Chicken Casserole Recipes For Freezer Meals

As a busy mother and grandmother, I am always looking for ways to prepare delicious meals for my family…for those busy nights when I don’t have hours to spend in the kitchen. To solve that problem, I like to make casserole dishes and freeze them for future meals.

When I make these 3 recipes, I make all of them in one day. You can freeze them in your baking dishes, however I like to go to the dollar store and purchase disposable foil baking pans. I can usually get them 3 for $1.00. I let them completely cool and then properly wrap them for freezing. They will keep in your freezer for up to 6 months.

Cheesy Chicken Casserole

1 lb. Velveeta cheese, cubed
1 cup milk
1/2 cup salad dressing
2 cups cooked chicken, cubed
2 cups peas, cooked and drained
8 oz. noodles, cooked and drained
1 tablespoon chives, chopped

Heat Velveeta cheese, milk and salad dressing over low heat. Stir until cheese sauce is smooth and creamy. Stir in the remaining ingredients. Mix well. Pour into casserole dish and bake at 350 degrees for 35 to 40 minutes.

Chicken and Rice Casserole

2 cans cream of chicken soup
1 small box of instant white rice
6 boneless, skinless chicken breasts
1 package onion soup mix
1/4 dry bread crumbs

Put one can of soup in bottom of casserole dish, cover with rice. Place chicken breasts on top of rice, sprinkle with onion soup mix, top with second can of soup. Cover and bake at 350 degrees for 1 hour and 30 minutes. Remove from oven and sprinkle bread crumbs on top. Place back into the oven for an additional 15 minutes.

Chicken Oriental Casserole

2 3/4 cups cooked chicken, cubed
1 small can of mushrooms or 1 cup of fresh mushrooms
3 tablespoons soy sauce
1/2 cup cashews
1 can cream of mushroom soup
1/2 cup celery, diced
1 teaspoon onion, finely diced
1 3/4 cups chow mein noodles

Place 1 cup of chow mein noodles in the bottom of your baking dish. In a large bowl combine all other ingredients except for the remaining 3/4 cup of chow mein noodles. Mix until combined. Sprinkle remaining chow mein noodles on top. Bake in a 350 degree oven for 35-45 minutes or until done.

Quick and Easy Chicken Veronique Ready in Minutes

If you are one of the busy working mothers or just cooks out there, I know how easy it is to slip into the habit of swinging through a fast food drive-thru window on the way home.  But that is not the best thing for your family, especially not on a regular basis.  It really is possible to prepare quick, healthy meals at home in a matter of minutes and with minimum cleanup.  So break the fast food habit, get your family involved helping you in the kitchen and start preparing more meals at home.  This Quick and Easy Chicken Veronique recipe is a good place to start.

QUICK AND EASY CHICKEN VERONIQUE

6 boneless, skinless chicken breast halves
1/4 tsp salt
1/8 tsp nutmeg
4 tsp butter
2/3 cup white wine or chicken broth
2 tbsp orange marmalade
3/4 tsp dried tarragon
2 tsp all-purpose flour
1/2 cup half-and-half cream
1 1/2 cups green grapes, halved

Sprinkle the salt and nutmeg over the chicken breast halves. Coat a large nonstick skillet with cooking spray and heat over medium heat. Melt butter in skillet and add the chicken pieces. Cook chicken 3 to 5 minutes per side until lightly browned. In a small bowl, combine the wine or chicken broth, marmalade and tarragon. Add the mixture to the skillet and bring to a boil. Reduce heat, cover and simmer for 7 to 11 minutes until the chicken juices run clear. Remove the chicken and keep it warm. Combine the flour and half-and-half until smooth. Slowly stir the cream mixture into the skillet. Bring mixture to a boil and cook for 2 minutes or until thickened. Stir in the grapes and heat through. Serve sauce over the chicken.

Note: This recipe is great for diabetics as 1 breast half with 1/3 cup sauce = 226 calories, 13 g carbs and 24 g protein.

How to Make an Easy Meal with Chicken Breasts Almondine (And it’s okay for diabetics, too!)

This recipe for Chicken Breasts Almondine is quick, easy, and healthy.  You can have this meal ready in a little over half an hour, after a long day.  Serve over brown rice with a salad or some steamed broccoli and you have a meal you can be proud to feed your family without a lot of work or clean-up.  And it is diabetic friendly, in case you have any diabetics in your family.  This is a good way for diabetics to enjoy some rice.  Most doctors say it is important to eat almonds, that they are a great heart healthy food, in moderation.  So this is a good way to work them into your diet.  In fact this entire dish is heart healthy.  Chicken, garlic, almonds, mushrooms; all good for your foods!  By-pass the fast food drive-thrus and fix your family this tasty, healthy meal instead.

CHICKEN BREASTS ALMONDINE

2 tbsp butter

1 garlic clove, minced

1/2 tsp salt

1 tbsp cornstarch

1/4 cup roasted slivered almonds

4 skinless, boneless chicken breasts

1 pkg (8-oz) sliced fresh mushrooms

1 can (10-oz) condensed chicken broth

1/2 tsp pepper

parsley for garnish, if desired

Begin preparing about 40 minutes before serving.

In a skillet over medium heat, melt the butter and brown chicken breasts, garlic, almonds, and mushroom slices, stirring occasionally until golden brown.  Add salt, pepper, and chicken broth.  Simmer, covered, for 30 minutes or until the chicken is tender.  Mix cornstarch with a little water; stir into the liquid in skillet.  Cook, stirring constantly, until thickened.  Garnish dish with parsley, if desired.
