    Rachael Ray 30-Minute Meals Recipe – Potato Dumplings

    Ingredients:

    • 4 sweet potatoes – peeled and sliced
    • 1 tablespoon EVOO
    • 1 large chopped onion
    • 1 large, peeled, shredded carrot
    • 4 slices of chopped smoky bacon
    • 5 sprigs thyme
    • 1 bay leaf
    • 1 teaspoon grated peel + juice of one orange and 1/8 teaspoon ground cinnamon
    • 1 cup sour cream
    • Maple syrup or honey
    • Pepper

    Method:

    • Take a large saucepan and add sweet potatoes with sufficient water. Boil it. Salt the water. Cook till tender.
    • Take a medium pot and heat EVOO.
    • Add bacon. Cook at medium heat until crisp. Stir often.
    • Transfer to a plate lined with a paper towel. Keep just 2 tablespoons of bacon fat.
    • Add carrot, onion, adobo sauce, chipotle pepper, bay leaf, and thyme sprigs. Cook for 5-7 min.
    • Stir in the orange peel, juice, cinnamon, chicken broth.
    • Drizzle with honey.
    • Season with pepper and salt.
    • Simmer until potatoes get tender.
    • Add broth mixture to sweet potatoes. Make a puree.
    • Serve the soup with bacon on top and sour cream.
